You could start with the hiramasa kingfish sashimi with almond milk, zucchini, jalapeño, mint and black caviar, which brings an interesting combination of flavours to the table. For a more substantial dish, the slow-cooked, braised beef short ribs with white onion, caramelised fennel and Pedro Ximenez sauce serves up rich, earthy flavours and is sure to satisfy.
