Chef Stephen Tam serves up Asian street food favourites, steering Umami’s menu through a road trip that stops in Japan, Thailand and Vietnam as often as it touches down in Singapore or China. A wall of waving Maneki-Neko cats greets you before you enter the neon-lit main dining area decked out with retro Manga/Bruce Lee cartoon mash-up decorations. Try one of the Asian-inspired cocktails while tucking into the hot Korean chilli barbecue chicken wings. The tender chicken yakitori skewers deliver a tongue-numbing Sichuan pepper buzz with a side of soothing, nutty satay sauce. Silky venison strips are an inspired addition to a beautifully balanced fresh green papaya salad. A chunky wooden board carries all the makings for your own lemongrass–beef rice paper rolls: a dish of water to soften your own rice paper skins, stir-fried marinated beef slices, hoisin sauce, thin rice vermicelli and a storm of Asian herbs and bean sprouts to sprinkle on top before rocking and rolling.
