At Gunners Barracks, Head Chef Nathan Darling has adopted a sensible approach to food, which is sourcing premium produce that is then prepared in a positive and fun manner. With Chef Darling’s influences from the United Kingdom and France teamed with his philosophy on food, diners are guaranteed a wonderful meal.
The restaurant is situated at Georges Heights Lookout, which overlooks the harbour and Eastern Suburbs. The wait staff create a serene atmosphere for a full dining experience that can be enjoyed by all.
The menu features crowd-pleasing dishes that are prepared and presented in such a way to let the diner know that they are experiencing fantastic produce. A fine example of this is the crispy pork belly, fennel, apple, mint and radish with verjus dressing. All the ingredients for the salad component of this dish are vibrant and still maintain their textures, shapes and flavours. This same approach is seen in the linguine, prawn, garlic, chilli, parsley and bottarga, a well-seasoned dish that allows the individual ingredients to shine.
