The George on Collins covers breakfast through to dinner with a selection of modern Australian menus packed with dishes that deliver on flavour.
The sleek basement restaurant recently underwent a significant renovation, which resulted in a light space with exposed brick, black and timber fittings and a feature bar with an elegant line of soft luxe pendant lighting running its full length.
Start the day strong and choose from a selection of savoury dishes such as the Moroccan spiced tagine, dressed with Yarra fetta cheese and topped with a poached egg. Lunch options are geared around sharing plates. From the smaller bites, try the crunchy pumpkin arancini filled with creamy risotto melded with parmesan and stracciatella cheese. Groups will enjoy sharing the larger plate of cumin and chilli lamb shoulder dressed with chilli paste and fresh coriander. Try the grilled New Zealand salmon fillet with crispy skin topped with a pistachio and Kalamata olive gremolata; the accompanying green beans will pop with the flavour of lemon zest and toasted almonds.
