German Head Chef Martin Bleich is in charge of the kitchen at The Baths Middle Brighton, a gorgeous spot right on the water overlooking Port Philip Bay. The upstairs upmarket restaurant has large, open windows to showcase the amazing views. It’s loud and buzzy, great for a formal Sunday family lunch or a romantic date night. The menu is very seafood focused with contemporary classics. Start with some spiced salt and pepper calamari: noodles of deep-fried calamari served on a fresh salad of fennel and rocket. A crisp pork belly salad comes with sweet apples and crunchy walnuts and a honey–mustard dressing. For a main, a fillet of crispy-skinned barramundi is accompanied by a Tuscan tomato relish and a potato stuffed with olives and two vibrant asparagus spears. Meat eaters may be tempted by the roast lamb rump, served with burnt carrot puree, baby carrots and a green salsa verde. Match it with a side of fries and green beans. PSST!
