Owner/chef Beau Vincent has an impressive résumé, having worked in some of Sydney’s best restaurants and with some of their best chefs. He brings this exceptional training to meticulously designed and executed dishes that show off his skills.
This contemporary bistro is located on the quieter side of Hunter Street. The main dining area lends itself to romantic dates and small groups, while the glasshouse at the rear can fit larger groups. subo offers a well-thought-out wine list, and a slick service level of which Newcastle should be proud.
Chef Vincent presents a five-course tasting menu that intentionally treads a fine line between fine dining and high-quality bistro. Chargrilled king prawn with four-pepper sauce and wood-ear mushroom is enhanced with puffed brown rice and edamame beans to create a multilevel experience of flavours and textures. Pork cheek, slow-cooked then fried, with a black olive and tamarind sauce and soft julienned cucumber delivers tender pork inside and a crisp exterior, teamed with an Asian-inspired sauce.
