The Saké kitchen brigade display a positive attitude in the open kitchen, which shows in the food they produce. As one walks towards the open kitchen, the kitchen staff roar out ‘moshi moshi’ with excitement, which echoes throughout the wooden surrounds, setting the tone of warmth and excitement. The cuisine is not strictly Japanese, as the culinary team incorporate influences from around the world, which makes for a fun experience. The Cape Grim short rib bo ssam pays homage to its Korean roots. The condiments, such as confit garlic, chilli sauce, and pickles in the style of kimchi, pair well, nicely wrapped with the beef and lettuce. The beef short rib is succulent, and booming with natural rich flavour. The nigiri sushi will also please the palate. Highly recommended is the eel unagi, as it is texturally satisfying, due to the supreme quality of the eel. Or opt for the snapper tai nigiri, featuring flavoursome fish accompanied by pickled ginger and wasabi. PSST! The kinako churros with vanilla ice-cream and pistachio dip are worth a try.
