Reypenaer cheese mousse with barbecued onion consommé is accompanied by a Jerusalem artichoke and mushroom cigar. The combination is an umami-packed dish of savoury elements and exciting textures. Roast and braise of venison with grilled beetroot and blueberries features the game meat cooked two ways: slowly and richly with beetroot and roasted to medium–rare with earthy beetroot and sweet blueberries.
