Chef Dan Pepperell continues to reward inner-city diners with the nostalgic feel and taste of France at Restaurant Hubert.
Restaurant Hubert is a French bistro straight from central casting. Descend the spiral staircase to the moody basement, and it’s all red velvet, dark wood, Pastis posters and bottles of booze on the rafters.
The signature burgundy-rimmed white crockery is the backdrop to a russet ingot of sublime duck liver parfait, with an earthy edging of maple syrup gel. Teamed with baguette and butter, it’s a winner! ‘Poisson et huitre’ matches sweet, raw kingfish with an oyster cream, ringed by a little pickled cucumber and crispy greens. Or go for broke with the Sterling caviar and buckwheat blini. Onwards, and the Rangers Valley bavette packs a full flavour as the aromatic tile of café de Paris butter melts into a lake around the dark crust and perfectly rare crimson meat.
PSST! The wine and beverage list rivals any Victor Hugo novel for length, content and drama. Sommelier Andy Tyson is close by to hold your hand should you need it, so sit back and enjoy.
