Attila Yilmaz created PAZAR Food Collective out of a combination of a sea change in career, a love of Middle Eastern cuisine, and a food truck. There’s a lot to love about this neighbourhood gem, where most of the dishes are artfully prepared in a wood-fire oven. The restaurant is a delightfully eclectic and rustic warehouse-style space, simultaneously cosy and vibrant, with a chaotic and yet charming fit-out. The dishes are definitely designed to share. The pomegranate-and-agave-glazed brussels sprouts with mandarin–tahini sauce, grapes and a peanut–sesame–chilli salsa is a masterclass in textural and flavour balance. And the minted braised pea salad with mesquite-smoked fetta cheese and pistachio dukkah elevates this oft-overlooked vegetable to new heights. But it is the harissa-roasted half chicken with tahini yoghurt, herb slaw and coriander salsa that demonstrates the skill in this kitchen.
