Attila Yilmaz created PAZAR Food Collective out of a combination of a sea change in career, a love of Middle Eastern cuisine, and a food truck. There’s a lot to love about this neighbourhood gem, where most of the dishes are artfully prepared in a wood-fire oven.
The restaurant is a delightfully eclectic and rustic warehouse-style space, simultaneously cosy and vibrant, with a chaotic and yet charming fit-out.
The dishes are definitely designed to share. The pomegranate-and-agave-glazed brussels sprouts with mandarin–tahini sauce, grapes and a peanut–sesame–chilli salsa is a masterclass in textural and flavour balance. And the minted braised pea salad with mesquite-smoked fetta cheese and pistachio dukkah elevates this oft-overlooked vegetable to new heights. But it is the harissa-roasted half chicken with tahini yoghurt, herb slaw and coriander salsa that demonstrates the skill in this kitchen. Flawlessly prepared, it should serve as the new benchmark for chicken in this town.
