Peruvian-born Chef Alejandro Saravia grew up influenced by the flavours and variety of the local cuisine. After working in top-class restaurants, under chefs such as Heston Blumenthal, Chef Saravia opened Pastuso in 2014. Tucked away at the bottom of ACDC Lane, Pastuso continues the theme of colourful street art across the restaurant. Bright pop art adorns the walls, and diners can choose from cosy booths, communal tables or take a seat up at the bar. Pastuso celebrates the fresh and vibrant cuisine of Peru. With a dedicated ceviche bar, it would be a sin not to sample from the numerous options on offer. Delicately presented, sliced spice-cured ocean trout has a beautiful texture and hit of chilli oil, while ruby red snapper cured in lemon juice is partnered with earthy caramelised sweet potato. From the more substantial ‘fire’ options, diners can choose the chicken slathered in a vibrant spring onion, lemon and lime salsa, or try the more traditional cordero (lamb scotch fillet). PSST!
