Owner Khoa Nguyen has brought Japanese hospitality to bustling Smith Street. Chef Anura Delpa Chitra’s well-crafted sharing menu features classic sushi and sashimi as well as more inventive small plates and mains. Pabu means ‘pub’ in Japanese, and the restaurant has a casual yet edgy feel. Exposed bricks are painted with murals of birds and animals, and there’s an abacus hanging from the ceiling. The friendly, well-presented staff members are incredibly courteous. With the plethora of Japanese favourites on the menu, Pabu Grill & Sake is the perfect place to share a meal with friends. A more-ish snack, tori karaage comprises chicken spare ribs that are both crispy and juicy. The dish comes with an array of robust salts and sauces that add depth and warmth. The creaminess of the lemon-scented fish tartare is wonderfully complemented by the texture of black sesame rice crackers. Wasabi mayo, lime and mountain caviar each provide the dish with a layer of flavour. PSST!
