With an impressive résumé of fine dining establishments both in Australia and overseas, Stephen Nairn heads up the new South Yarra bistro, Omnia. Recently moving from a pop-up site, Omnia now has a permanent home in the new luxury building Capitol Grand. Enter into an atrium bar filled with green foliage and David Bromley paintings, while the back area has a large open kitchen and opulent banquettes to nestle in. Using premium produce, the menu boasts European classics with a twist and new creations. Start with some oysters and a zucchini flower with mint and green olive. Starters include Omnia’s take on a steak tartare, a circle of raw meat with red capsicum, dried chilli and pomme gaufrette. An elegant plate has yellowtail kingfish daintily placed with a crunch of apple and kaffir lime. Mains include herb-crusted rack of lamb, with a pink centre, and green olive on a bed of labne, or a flounder served whole in a rich brown butter sauce. PSST! Created by 2018 World-Class Global Bartender of the Year, Orlando Marzo, Omnia’s cocktails are a highlight.
