Head Chef Sarah Chan heads up the brand new Mya Tiger, a Cantonese restaurant in the middle of the mammoth complex at the Hotel Esplanade.
For decades known as ‘The Espy’, this ginormous historic pub has been closed for a number of years and has just reopened after undergoing serious renovations. Boasting iconic views of St Kilda Bay, Mya Tiger has an uber-cool feel with a fast-paced, atmospheric environment. Cocktails are a highlight, such as their frozen lychee martini.
The menu starts with snacks, such as a circle of premium-quality raw kingfish with soy and hints of truffle. Juicy dumplings are filled with minced chicken and tiny hits of ginger, while the crispy pork bao has a lovely soft outer casing and deliciousness inside. Mains include a swimmingly fresh fish of the day – which may be a barramundi fillet with ginger, soy and shallot – and the crispy skin chicken that you can hear go crunch. For lovely aromatic flavours, try the delicious roast duck noodle dish.
