Chefs Dan Hong and Matthew Swinhoe
After working in an impressive array of kitchens, both abroad and in Australia, Dan Hong joined Ms.G’s, where he and Head Chef Matthew Swinhoe bring fun and imaginative dining to Sydneysiders.
The four-floor venue, whimsically decorated with ropes, jam-jar lighting and mismatched chairs, boasts floor-to-ceiling back windows that offer city views across the rooftops of Potts Point.
This is a made-for-fun, bustling space with a cleverly designed sharing menu that draws on cuisines and flavours from across Asia. More traditional offerings include spicy pork-filled gyoza with black vinegar–soy dressing. For new takes on classics, think Vietnamese steak tartare, as well as some avant-garde offerings, such as the must-try cheeseburger spring roll. Ms.G’s mini bánh mìs are soft sweet rolls filled with either crispy fish or chicken and come with a punchy dressing and pickled vegetables. For larger shares, try the generously portioned sweet and sour pork ribs. The gently yielding meat, crisped on the outside, is finished with a lick of tamarind caramel.
