Chef Brendon Barker uses the best of Queensland produce in a contemporary fusion of European and Asian cuisines that both works and is exciting. Madame Wu has superb views across the Brisbane River from a large dining area, which features a central cocktail bar and an eclectic mix of lights, partitions, bamboo and wooden tables. A team of efficient and informative staff ensures customers are served quickly. Steamed duck buns are soft and chewy with a generous filling of sweet and savoury shredded duck. Moreton Bay bug dumplings are dense with an excellent seafood flavour, and served with spicy XO sauce and a tart lime pickle. Wu’s special fried rice is a colourful and aromatic mix of peas, carrots, onion and shallots with disks of pork sausage and plenty of omelette – a generous meal in itself. A boned and rolled pork hock is cooked crisp on the outside with a melt-in-the-mouth soft and succulent centre, served with a red vinegar, apple and nashi pear salad on a thick Stone’s Ginger reduction.
