Chef Clement Chauvin and co-owner/Sommelier Abel Bariller (both ex-Sage Dining Rooms) are the team behind Les Bistronomes, a dash of French tradition in the lively Braddon dining precinct. Exposed brick and a wall full of wine complement the dark-wood tables and upholstered chairs, creating a convivial salon atmosphere for larger groups or a date night for two. There’s an open street-side space too for balmy summer nights. What better way to enjoy freshly shucked Sydney rock oysters from Merimbula than with a glass of zesty Languedoc Picpoul de Pinet – one of the best wine matches to a briny oyster? For a fresh vegetarian option, try the in-season, tender asparagus set in a pool of hollandaise fragrantly enhanced by a hint of lavender. For mains, the whole New Zealand lemon sole is enrobed with a parsley beurre blanc and punctuated with the bursting sweetness of baby spring vegetables. The menu changes regularly so expect daily specials depending on what’s market fresh. PSST!
