Chef Shao Yi Kuek and co-owners Jared Calnan, Ben Ilic and Andrew Duong have inserted a delightful Korean-ish, pan-Asian (with a dash of Uncle Sam) eatery in the Braddon dining precinct. A welcome from the bank of lucky Maneki Neko (Japanese waving cats) and a seat under a wall-sized mural of the Great Wave off Kanagawa will get you in the mood. So will the neon signs and pale wood banquettes. Philly cheese steak meets the spring roll. The cheeseburger meets the bao. Not nuclear mutants, but jolly good ideas. Never did prawns and bacon find such a happy marriage as they do inside silky purses of dumpling skin swimming in a light, spicy, vinegary broth. Juicy and crisp, buttermilk fried chicken finds its way from America’s deep south to Japan on a road paved with spicy ramen, soft egg and nori strips. But when too much fried chicken is never enough, follow up with crispy smashed chicken with a robust sambal and shallot and ginger garnish. PSST! Head downtown a few blocks to Baby Su, the quick-service little sibling from the same team. Reviewed for the 2019 Guide
