Celebrity chef Guy Grossi has joined forces with Perth’s Westin Hotel to create Garum, where the classic food of Italy’s Lazio region is celebrated. Head Chef Mario Di Natale has developed a mouth-watering, balanced menu of Roman delights. Garum presents a modern, relaxed room, where the smell of freshly made sourdough wafts out from the open kitchen and attentive staff are happy to guide you through the menu. The wine list is expansive, with a heavy focus on Australian and Italian varietals. Start with that tempting sourdough paired with handmade moretum (a herb cheese spread that can be traced back to ancient Roman times). For an appetiser, tuna crudo topped with the restaurant’s namesake, garum (a Roman sauce made from fermented fish), citrus and beetroot is a textural and sensory delight! You can then take your pick of the many delicious, house-made pastas (or keep it classic with bucatini amatriciana) before rounding out your meal with a main of fish, veal, lamb shoulder, bistecca or even some porchetta.
