Since taking over in 2014, Chef Troy Frater has established Dunes as an iconic Palm Beach restaurant, a favourite among locals and day-trippers alike. Located on the Palm Beach spit, the restaurant was once the ranger’s cottage and its wonderful beachside setting makes it a popular choice for wedding receptions.
Chef Frater’s menu is simple but offers something for everyone. The beautifully presented twice-cooked half duck with chestnut risotto and duck jus is a classic flavour combination. The chestnut flavour is the perfect complement to the crisp, rich duck meat. A vegetarian red curry of broccolini, pumpkin, apple eggplants, king brown mushrooms and silken tofu with organic brown rice is full of flavour and not too spicy, with the apple eggplant proving a great flavour addition to a traditional curry.
