The historical and technical concepts behind many dishes on the menu remain unchanged; however, seasonal variations keep it fresh for return diners. Frumenty (a dish that dates back to medieval times) is reinvented with lightly grilled octopus, spelt as the foundation, with a leek and chervil emulsion and divine smoked sea broth that delivers lovely aromatics as it hits the table. The slow-cooked pork belly, intentionally served without crackling, relies on the more-ish green pea pudding, pickled onions, subtle black pudding, and bacon and mint oil to deliver the cohesion and wow factor.
