Dexter is bringing inventive American-barbecue cuisine to Preston, with head chefs Tom Peasnell and Adam Goldblatt serving up quality cuts of meat. With a modern fit-out and set against a warm red light and an edgy ‘80s soundtrack, Dexter brings the party to Preston. Take a seat at the long bar topped with an intricate light installation, or dine at one of the tables lined along the wall. The menu is a carnivore’s delight featuring a number of distinctive options not found elsewhere. Start with the meat donuts, rolled in paprika sugar and filled with tangy smoked pork – a savoury treat. Buns are served with your choice of smoked meats, with accompaniments such as Asian slaw and house pickles. Larger dishes come with house-made pickles and rich bone marrow mash, and the caramel short rib is a popular choice for good reason. Brushed with a caramel glaze and smoked, the meat is incredibly tender and falls off the bone. Vegetarians will enjoy the Kentucky fried cauliflower, deep-fried in a spicy, addictive batter. PSST!
