Matt Swieboda’s edgy local wine bar has found its feet over the past year, and Chef Hugh Piper creates culinary delights to accompany the great drops on offer. You’ll find Dear Sainte Éloise tucked at the end of a laneway. When the weather’s warm, wide full-length windows capture the breeze, while in winter the communal bench, bar and a cluster of small tables keep it intimate and cosy. The list of snacks is concise, but includes their signature roe boat, a pimped-up potato-gem one-bite wonder heaped with salmon roe, and there’s always freshly shucked oysters or blinged-up crisps. Perhaps follow with the globe artichoke with paprika aioli or the tender shiitake mushrooms poached in thyme tea and parmesan oil. For something more substantial, try the tender grilled hanger steak, served sliced on a classic onion soubise sauce. But the focus here is always on what’s in your glass, with the fantastic wine list heavy with natural, low-sulphur, rare and treasured drops. PSST!
