The constantly evolving menu scribbled on a chalkboard may include a steak tartare with a twist. Arriving on a bed of sour cream with crisps of potato and beetroot, the finely sliced premium beef is topped with two miniature fried quail eggs. Yellowfin tuna carpaccio covers the plate like a purple flower with crunchy chargrilled sourdough, capers and a drizzle of lime-infused olive oil. Fish of the day may be a roasted dory on a bed of saffron moghrabieh with peas, parsley and a crisp soft-shell crab on top.
