Head Chef Tim Brindley brings years of fine dining experience to Matt Moran’s garden-to-plate restaurant in the Art Gallery of New South Wales.
With commanding city views, this is quintessential Sydney smart–casual dining at its best. Natural light pours through the vast expanse of huge windows, while high white ceilings and pillars, coupled with elegant natural wood tones, combine to create an airy, relaxed feel.
Supremely cooked prawns are an absolute delight, chargrilled to a mouth-watering moistness, and paired with a flavour-packed red chimichurri that is both equal parts lively and super-fresh. A deft touch is also applied to the snapper. Seared to perfection, the balance between crispy skin and sumptuous flaking, the glistening white flesh sits front and centre on the plate. Paired simply with a creamy, delicious anchovy dressing, chargrilled broccolini and onion layers, and draped with rocket, it highlights wonderful fresh ingredients.
