Chef Kristian Vale leads the kitchen team at China Lane, and brings a curiosity for new and innovative ingredients and techniques. If there was an award for best directions to a Sydney restaurant, China Lane would steal the show with its whimsical ‘down the lane and beneath the forgotten songs’. The ‘lane’ is just behind Martin Place, and the ‘forgotten songs’ is the art installation of vintage birdcages that hang above the restaurant’s outdoor seating. The decor inside does the entrance justice, with a dark and moody dining room, reminiscent of a yesteryear Shanghai. A selection of raw dishes is an interesting place to start, with master stock pig’s ear and cured snapper from New Zealand on offer. Prawn san choi bao is crisp and flavour packed, and the duck pancakes, served with a sweet hoisin sauce and refreshing spring onion, are a must-order. The larger dishes are great for sharing, with the wagyu beef massaman and sweet potato a rich, creamy and satisfying curry. PSST!
