Chef Ryota Kishimoto’s’s menu uniquely combines contemporary cuisine with classic Japanese techniques and flavours using the best local produce available. Chaco Bar is best known for its ramen and grilled skewers (yakitori). Located in bustling Darlinghurst, Chaco Bar is a cosy little restaurant. The traditional Japanese wooden country-style design mixed with its casual and quirky atmosphere aligns well with the food style. The menu is designed for sharing. A great start to the evening is the sashimi platter with oysters, octopus, basa grouper and ocean trout. Then try the uni wagyu beef with fresh sea urchin, Tasmanian black truffle, egg yolk and finely grated parmigiano reggiano. This is a fantastic and elevating dish, and an interesting interpretation of the French classic: steak tartare. A must-have is Chaco Bar’s signature yakitori dish – chef’s six skewers of crispy pork belly, chicken thigh, chicken crackling, chicken wings, lamb and chicken heart, all with distinctive charcoal flavour.
