Executive Chef James Kidman has spent time in a variety of establishments being tutored by some impressive culinary luminaries and building up his repertoire. His offerings are international and extensive. The elevator doors open to wide-smiling hostesses who usher you to your table with ease, guiding you safely through the various steps. The rooftop position affords spectacular views of the harbour. Cafe Sydney’s offerings draw from all around the world, and this is evident throughout the menu, from the appetisers to the main dishes and even the breads. Dishes are attractively presented on the restaurant’s own unique crockery. Cured salmon belly, bug tail, crisp salmon skin, avocado, finger lime and salmon roe is a summery dish with bright, clean flavours. The salmon is cut into fine cubes and teamed with shredded bug meat, providing a nice colour contrast. Suckling pork belly, morcilla, quince, brussels sprout, parsnip cream and coffee–hazelnut crumb is a warm dish with a wonderful flavour and texture contrast. PSST!
