When you combine Maurice Terzini’s vision with Chef Monty Koludrovic’s food, and bring them together at a bar in Bondi, the result is a vibrant and casual venue with classic pub food. The simple industrial fit-out is counterbalanced with a changing (and colourful) gallery of artworks on the walls. There are plenty of beers on tap, pre-batched cocktails and a small but clever wine list to suit most palates. The menu has clear Italian influences, and is elevated through innovation and experience. The popular double squish cheeseburger is a diner classic – all soft bun and meaty–cheesy goodness. The pizzas are classic Romanesque – a thin and crisp base adorned with a few simple ingredients. And if you want to know what an excellent, authentic Caesar salad should taste like, then this should be your first order. Of course, the pasta here is no slouch. A rich brisket bolognese served with impressively soft ricotta is both balanced and satisfying. PSST!
