Bistro Mosman The name has changed from Bistro Moncur Mosman but Jon Trouillet is still stirring the pots and pans in the kitchen. Trained with the best chefs in France he kept his menu very much French including his signature dish “Le souffle aux oignons caramelises” and the snails cooked with parsley and garlic butter. Jon grew up around fresh produce in France and today he is still passionately using them in his cooking whenever he can. Located in the popular The Buena in the centre of Mosman the smart-casual bistro is popular for business lunches and is very much frequented by the locals for dinner. The large windows, the high ceilings and the show kitchen are very much suited for that lively restaurant. The extensive menu offers many popular French classics but the Souffle would certainly be Jon’s master piece and is portraying his French heritage. With his pan roasted “Cone Bay “ Barramundi he shows off his broader cooking skills. The skin was crisp, the fish moist and translucent, perfectly cooked to the point. The Ratatouille which accompanied the “Cowra ” lamb cutlets had an amazing array of flavours giving the lamb a strong stage to shine. PSS. On Wednesday’s BYO wine night bring that special bottle from your cellar waiting to be enjoyed with your friends.
