Imagine having some cool friends with excellent taste and a deep knowledge and love of alcohol, who open a bar to share with the world all stuff they like. Well, that bar is Bar Liberty and your friends are Chef Casey Wall, Sommelier Banjo Harris Plane and managers Manu Potoi and Michael Bascetta.
The bar is located in the heart of Fitzroy, behind a gritty façade and marked by a graffiti-style spraypainted sign. The interior is pared back and at night, dimly lit. Expect an eclectic selection of music and a pleasant buzz.
Bar Liberty describes itself as an ‘alcohol-focused bar and bistro’, and offers an interesting and extensive selection of beverages. The menu is an eclectic mix of European, Asian and modern Australian. Fresh, unctuous burrata is served at room temperature on a tasty anchovy and chilli-infused bed of swiss chard, creating a contrast of flavours and textures. Pipis in XO sauce come with a side of savoury donuts for dipping in the fragrant and aromatic broth.
