Busy TV chef and restaurateur Colin Fassnidge has put a stake in the ground for upmarket pub food in the suburbs, and has upped the game with Banksia Bistro, where Head Chef Darwin Leonarr (ex-4Fourteen) leads the kitchen team. This is a pub, for sure, but it’s family friendly, with a welcoming smile, neat and clean lines and plenty of tables for groups, large and small. Of course, the menu features pub favourites like chicken schnitzel, fish and chips or bangers and mash, but there are some innovative gems to try too. Flash-grilled scallops in the shell swim in a more-ish café de Paris butter (order some bread to soak up those scrumptious juices!). Dollops of creamy house-made ricotta are dotted among ripe heirloom tomatoes, with a wake-up splash of tart and spicy chimichurri. A proper generous, fat burger of ground dry-aged beef is char-grilled and pink, as promised on the menu. Dressed with melty cheese and a zesty sauce, it sits snug in an airy, light milk bun. PSST!
