Chef Charlie Carrington opened Atlas Dining at the young age of 22. A few years later, he is still demonstrating a maturity well beyond his years, with exceptional food and creativity in each dish.
In keeping with the restaurant’s name, the theme changes to a different country every quarter. The small but cosy restaurant has a $65 set menu of five dishes, each uniquely designed to capture the essence of the focus country.
Grab your sombrero and let’s go to Mexico! Start with squid aguachiles – delicate, charred squid with thin radish and cucumber. The ‘corn, anchovies, asparagus’ sounds so simple, but the palate is unique and complex with a creamy base, subtle salinity from the fish, crunchy corn for texture and a shaving of asparagus. A highlight is the blue corn tortilla, avocado, squid ink and octopus in a fresh dressing. Lastly, the Mexican spin on a lamb tortilla is outstanding – the velvety melt-in-the-mouth meat is served with a broad bean puree, avocado and Mexican dukkah.
