At Altitude Restaurant, Chef de Cuisine Insup Kim uses his own influences, twists and interpretations on some of Australia’s favourite local produce. The restaurant is located on the 36th floor of the Shangri-La Hotel, and offers spectacular views of the city. The muted earth tones of the furnishings and the subdued lighting ensure that nothing detracts from the main attraction just outside the floor-to-ceiling windows. Carpets and upholstered chairs help maintain an intimate, romantic atmosphere. Most of the dishes may be familiar to diners, but it’s what accompanies the main ingredient that makes Altitude’s food so surprising. For instance, the seemingly simple beetroot entree becomes a fiesta of flavours when paired with persimmon, pomelo, yoghurt, pistachio and crunchy fruit chips. In similar fashion, abalone, brussels sprout kimchi, radishes, pear puree and prosciutto bring a party of colours and textures to the Byron Bay suckling pig. PSST! Multi-award-winning dessert queen Anna Polyviou is the Shangri-La’s Executive Pastry Chef, so it’s no surprise that the desserts are brilliant. Be sure to try one. Reviewed for the 2019 Guide
