10 WILLIAM ST. is the wine bar in the Fratelli Paradiso stable. Over the years, many leading chefs have taken up guest placements in the kitchen, but it is now in the capable hands of Head Chef Enrico Tomelleri.
10 WILLIAM ST. is a local favourite, with the no-reservation policy seemingly not a problem for the many people willing to sip at a nearby bar until a table opens up. Squeezed into two narrow floors of a Paddington terrace, diners sit at small tables, surrounded by wine bottles and chalkboard menus.
The menu has a healthy mix of favourites and seasonally inspired specials. Scallop ‘nduja toasts are a great start – the crunchy exterior encases creamy and spicy scallop meat. Fresh blue-eye cod crudo matches well with a crisp nashi pear and dried saltbush. For those looking for more than snacks to pair with their wine, a number of hearty pastas are available, such as the cacio e pepe, a refreshingly light and citrusy dish with a raw duck egg stirred through.
