Diners are offered a choice of menus, from a four-course à la carte selection to seven- or nine-course omakase options that showcase the chef’s innovative dishes. The food is meticulously crafted and beautifully presented on custom crockery. The menu changes regularly with delicacies such as wagyu beef croquettes with soft tofu and a delicate chipotle broth; a crisp tempura of baby leek stuffed with local scallop and yamaimo yam with karasumi roe and a yuzu zest; kingfish cured in a lime and dai dai citrus ponzu with ginger and green onion; soba noodles with local sand crab, egg yolk, smoked sand crab dashi and duck fat; and roasted quail with burnt lime, barley and oyster mushrooms in an umami broth.
