Chef Mike Eggert is best known for his work at Pinbone and his recent stint at the too-short-lived Dirty Italian Disco. That said, his background includes Sepia, Billy Kwong, sixpenny and ester, so his skill set is broad and grounded. He is teamed up at Totti’s with Chef Khan Danis, who used to run the team – and the wood-fire grill – at Rockpool Bar & Grill. Dream team springs to mind.
This bright, chic and casual Italian eatery is rather unexpectedly situated in the iconic Royal Hotel on Bondi Road.
Pasta is the main event here, but the wood-fire grill also produces some serious offerings, including an 800g rib eye and a whole Bannockburn chicken. The rigatoni with milk-braised pork and chilli shows how a few simple ingredients can produce a classic, hearty dish with contrasting textures and balanced flavour. The linguine with spinach, herbs and walnut pangrattato offers umami satisfaction normally associated with a meat-based version. And the salads receive the same attention in terms of composition and balance.
