Restaurants in international hotels are always a challenge, having to cater for a wide variety of tastes. At The Ternary in the Novotel Sydney on Darling Harbour, Executive Chef Anthony Flowers has done an excellent job, with two distinct kitchen menus – an Asian wok kitchen and a steak grill.
The setting overlooks Darling Harbour and the spectacular city skyline. The restaurant is fresh, modern and spacious. The service is quick, relaxed and efficient.
The menu, with two sections, reflects the two kitchens and the food is freshly prepared in the glass-enclosed kitchens. The pulled peppered beef in crispy pastry is a signature dish – a tasty, deep-fried beef roll served with a sweet tamarind sauce. The Atlantic salmon from the Asian kitchen is delicately cooked in a tandoor oven, with a crisp skin and served with a pea puree and grilled watermelon – a good blend of flavours and textures. The 250g tenderloin from the grill is cooked pink in the middle, tender and juicy, served with potatoes, spinach and watercress.
