Signature is the premium dining experience in the Emporium Hotel, overseen by Chris Norman and Alex Liddle (ex-Palazzo Versace), who also have experience at The Square and The Ritz in London, and at Hayman Island.
Located on the first floor, there is an extensive wine and champagne cellar covering one wall of the elegant dining space. The comprehensive wine list includes a few by the glass that are well priced. Service is formal, attentive and efficient.
The menu offers a small à la carte section, two degustation options and a dedicated vegan menu. The kangaroo tartare, beautifully presented, is tender and delicate, served with fresh blackberries, beetroot puree and a smoked egg yolk with rye crispbreads. Flinders Island Saltgrass lamb is served two ways – the loin, pan-roasted until pink and tender, has classic lamb flavour complemented by chargrilled zucchini and capsicum, whilst the shoulder is slow cooked for 18 hours until dark, caramelised and falling apart, and teamed with eggplant puree and caramelised yoghurt.
