Head Chef Dylan Camilleri’s solid Italian menu features many authentic favourites – albeit with unique Australian twists. Fresh produce and luxe ingredients shine through in his carefully constructed dishes. Tucked away on the furthest end of buzzing Fitzroy Street, Sapore boasts a view of busy beachside St Kilda. The interior has a welcoming, plush feel, with plenty of soft hanging lights and cosy banquettes.
With an extensive menu that includes many vegetarian and gluten-free options, Sapore has a traditional and balanced offering of dishes that will entice all diners. A flavoursome, comforting and warming way to begin your meal, baked eggplant is a classic flavour pairing of ‘skinny’ eggplant, passata, basil and mozzarella. Seafood linguine comprises a generous twirl of pasta brimming with sweet crabmeat and plump mussels. Accented with chilli, white wine, garlic and tomato, it is a delicate and appealing dish.
