Located in the InterContinental Sydney Double Bay, Saké purveys elegance and exclusivity. The open kitchen and bar area has marble panelling that is subtly illuminated to enhance the restaurant design.
Fierce looks of concentration can be seen on the faces of the sushi chefs, indicating the seriousness of the culture and art of sushi. Kept in a refrigerated countertop display, the fish are within arms reach of the master chef, who gently removes the fish and deftly slices the flesh. Wetting his hands, the sushi rice is manipulated for the nigiri sushi. Each piece is treated differently: the cuttlefish is scored and brushed with a mysterious sauce; the kingfish belly is cleverly paired with a drop of jalapeño puree, while the bonito is given the torch treatment for smokiness.
