Warrnambool’s Zac Nicholson honed his skills both here in Australia and overseas in North America. He has been at Melbourne’s Rockpool Bar & Grill for 10 years now, and in the role of head chef for the last five years.

The menu has a strong focus on wood-grilled items, but with plenty of other options. Delicate pan-fried garfish fillets go so well with a white wine sauce. An expertly grilled rib eye is sliced and simply presented with a wedge of lemon, bearnaise and horseradish. A great steak is made perfect by the sides that go with it – green peas bound with a creamy egg and finished with the classic chiffonade of lettuce and Dutch Cream potatoes, crisply sautéed with the rich flavour of wagyu fat, garlic and rosemary are highlights.
