Dining at Ripples Chowder Bay will reveal that harmonising flavour, seasonings and ingredients is done by a gifted culinary artist, with all components executed to perfection and beautifully presented. The chicken liver pâté, blueberry jam and toasted focaccia is a wonderful way to start your meal. The varying textures – from the pâté to the toast and the jam – play a pivotal role in creativity. The cured tuna tartare, cucumber, black sesame, crème fraîche and sorrel presents another fine example of the chef’s skill set, with every bite delivering a crunch, cooling effect or richness that has a sense of theatre.
