Head Chef James Brady trained in London and worked in France, Spain and Greece before coming to Queensland. He has the challenge of creating dishes that compete with one of the best views on the Gold Coast.
Rick Shores is located on the beach at Burleigh Heads. Exposed concrete floors and walls, wood-topped tables and benches result in a noisy but vibrant atmosphere. The service is casual and friendly.
The menu features Asian-inspired dishes using local produce. The signature Rick’s fried bug roll is a crispy fried Moreton Bay bug in a soft roll with butter and sriracha. This spicy offering, with distinct seafood flavour, is generous and very satisfying – with a glass of champagne and a superb view, it’s a perfect lunch! Or you could try the crab and prawn dumplings, served in an aromatic ginger and bonito broth. For mains, a slow-cooked pork hock is served with a caramelised bacon sauce, pickled garlic and chilli. A creamy yet spicy chopped vegetable salad is the perfect accompaniment.
