Follow with san choi bao, and fill a crisp lettuce cup with an excellent mix of minced chicken, Chinese pork sausage, water chestnuts and bamboo shoots then dip into the sweet plum sauce. Stir-fried crystal prawns are plump and juicy, and are served with traditional vegetables of carrot, snow peas and spring onion. Salt and pepper soft-shell crab has a thick, crunchy batter and just the right amount of fresh chilli. Finish off with a traditional banana fritter, almond cookies and Chinese tea.
