Nick Stanton heads up the unique and interesting kitchen at Ramblr. With a Korean-fusion focus, the creativity of his food is undoubtedly among the most inventive in Melbourne.
The sophisticated dining room attracts a glamour crowd. Dark and somewhat mysterious, the place has a cutting-edge much like the food.
Ramblr’s menu focuses on continuous exploration and is often fuelled by spice, smoke and charcoal. For an unusual texture and flavour balance, start with a plate of white curly calamari noodles on a fermented kimchi. The sticky eggplant has a Chinese influence with shiitake and black bean sauce teamed with a sweet corn velouté and lemon verbena. The house-made noodles are a highlight – thin curls of buckwheat in a delectable master stock with chunks of fresh crabmeat. Try whole charcoal poussin, marinated in a blend of Korean spices and with a crispy skin that will have you fighting over the last leg! Match it with barbecued vegetables on a macadamia cream with a subtle hint of chilli oil.
PSST! Ramblr is open for lunch with a menu that focuses on interesting ramen bowls.
