Encased in a golden breadcrumb coating, the jamón croquettes have a smooth béchamel sauce that is rich in flavour. The grilled lamb chunks, a rustic and fun dish, brings together the flavours and textures of tender, boldly flavoured lamb chunks, green onions for a raw, tangy bite, and the sweetness of sun-dried tomatoes. Pan-fried scallops wrapped in jamón is a showstopper dish. Tender soft scallops are topped with crisp jamón pieces, served on a bed of cauliflower and blue cheese puree that balances the dish perfectly.
