The menu offers two-, three-, five- and eight-course options. Start with an entree of smoked mullet, delicately dressed with hints of apple and dill, followed by squid ink ravioli of buffalo mozzarella, with the combination of the accompanying sea urchin, salmon roe and grapefruit proving exceptional – a memorable and beautifully executed dish. Mains follow, including the signature hand-rolled fregola risotatta with pearl onions, leeks and wild garlic. This immensely satisfying dish is so good that you won’t want it to end! However, you’ll be quickly won over by the expertly roasted Cowra lamb loin, which is cleverly teamed with the harmonious partners of heirloom eggplants and black garlic.
