Executive Chef Alessandro Pavoni brought his northern Italian cuisine to Sydney in 2003, and opened Ormeggio at The Spit in 2009. Head Chef Victor Moya trained in Spain and gained experience at leading restaurants in Europe.
The restaurant has a calm, sophisticated atmosphere with comfortable upholstered chairs and noise-minimising carpet. The colours are soft and neutral, so there’s no distraction from the stunning water views.
A choice of degustation menus is offered, all featuring beautifully prepared and presented Italian- and Spanish-inspired dishes, such as the yellowfin tuna crudo served with pistachio mousse and crumb and ocean trout roe. The gorgeous combination of flavours and textures highlights the sparklingly fresh, sweet fish. House-made bottoni pasta floats in a delicate clear consommé and explodes in the mouth with a rich parmesan broth. Portions of rich, buttery, medium–rare wagyu are so good that they almost don’t need the pimiento and black garlic garnishes.
